Tomato Pie Recipe

I have a healthy recipe for Tomato Pie that I would love to share with you and it's a great way to use up left over tomatoes grown from the summer.  

This dish is great served with a salad on the side.  It can be used as an appetizer also.








TOMATO PIE RECIPE

Serves 4 - 6 people

INGREDIENTS:

2 to 3 large tomatoes
1 small bunch of red onions, thinly sliced
1 tablespoon fresh basil, chopped
salt and pepper to taste
3/4 to 1 cup mayonnaise
1 cup grated sharp cheddar cheese
1 9-inch wide deep pie shell

DIRECTION:

Preheat oven to 350 degrees F.  Slice tomatoes into thick slices.  Place them in layers into the pie shell, sprinkling each layer with onion, basil, salt and pepper.  Mix together the mayonnaise and the cheese.  Spread the mixture over the tomatoes.  Bake for 30 to 45 minutes, until filling is browned.  Remove and allow to sit for 10 minutes before cutting into slices to serve.

  5. This looks delicious Julie. I have never heard of this! My sister grew her own tomatoes this year and had a bumper crop! She lives around the corner from me, so needless to say, I have tons of tomatoes! Glad to have something else to try with them! ;)
